The story & symbolism
Gefjon is a great goddess mainly associated with her tale of ploughing away land in Sweden which left behind the lake Mälaren, and the land she set to sea became the island Zealand. She has four oxen children who helped her achieve this feat when challenged by king Gylfi. Her roots can run deeper and further back in history, as an agricultural goddess associated with fertility, protection of women, foresight and prowess and her children could be inspired by the great Aurochs that roamed Europe during the viking age and before that. She also owns one of the afterlives in Norse mythology, claiming all those who die as a maiden.

OXEN CHILDREN
On her I've depicted the four oxen (auroch) children around her, protecting her and gurading her from all sides. These children he somehow conceived with a Jotünn after the king Gylfi had challenged her to plough as much land as she can in one night and day.
PLOUGH
In front of her she is holding a plough with 5 tips, these symbolise her and her 4 children. She is also a crucial part of the ploughing process, and anyone that has worked on the field knows that even though the animal is doing a lot of the work, you need to also be capable as a person to plough fields (especially if theres stones)
COMMONERS ATTIRE
She has commoners attire and braided/dreaded hair as symbolizing that she has worked outside and on the field a lot and not had too much time to comb her hair. Someone who in Swedish we would call an rejäl, a tough person that can walk through trees basically
